Tequila & Tiki: the Jalajaja Swizzle

Happy September Monday to y’all! Hopefully things are starting to cool down for you, but if you’re living anywhere in the USA, I highly doubt it. It’s been super hot here in Brooklyn and I have it on good authority that it’s still pretty hot in SoCal and Texas too.

Not that heat = Tiki cause y’all know how I luv to Tiki The Snow Away, but nevertheless, I need a tall-icy-fruity-Rum-filled….wait, what?

Bwahahaha! It’s not Rum, it’s Tequila! Today’s drink came about cause I really wanted to make a Tequila Tiki drink and I thought the Swizzle would be a good format. I was thinking Corralejo Reposado Tequila but then I was also thinking it’s pepper season and I remembered that this Tequila is really snappy when infused with Jalapeño (or Serrano, Serrano is super tasty too).

I apparently couldn’t live without some version of Rum, so I added my new fave ingredient, Kalani Coconut Rum Liqueur. This stuff is maaaaad tasty: grassy (like a mild agricole), has some notes of chocolate, caramel, and citrus in addition to the obvious Coconut. Kalani is made with 100% Natural Mayan Coconut Rum, has a silky viscosity, a good level of sweetness, and (just like my bottle of Tequila) is from Mexico.

Sooooooo, maybe I really just wanted to make a Mexican Swizzle, mmmmhm. #MexicanPride

The spice and juice set came about cause:

  1. Grapefruit and Tequila are best friends.
  2. Lime juice for more tartness and length.
  3. Honey cause I knew it would be a match made in heaven.
  4. Peychaud’s Bitters for anise and some interesting depth.

Grab either yer swizzle stick or a long barspoon for this one.

Oh and like spanish speakers do, pronounce the J’s in this drink “ha-ha-ha”, then it basically sounds like you’re laughing and will make you feel pumped to try this drink!

Jalajaja Swizzle 

  • 2 1/2 oz Jalapeño infused Corralejo Reposado Tequila
  • 1/2 oz Kalani Coconut Rum Liqueur
  • 1 oz White Grapefruit Juice
  • 1/2 oz Lime Juice
  • 1/2-3/4 oz Honey Syrup*
  • 2 dashes Peychaud’s
  • Garnish: candied Ginger, Mint sprig

Add ingredients to large Tiki mug, add cracked or crushed ice and swizzle til the glass has started to frost and everything seems to have combined. Add a lil more ice on top if needed and garnish.

*Depends on how sweet you want it. I tried it both ways and was honestly not sure which one I liked better.

Y’all, guess who actually went out and bought a bottle of Vodka? THIS GURL! I was at the farmers’ market in Prospect Park and Orange County Distillery was sampling some of their spirits. I tasted the Gin and Vodka, both of which were pretty tasty, but the Vodka was honestly better!

“Gurl what? You liked a Vodka better than a Gin? Why?”

  1. It’s made from Sugar Beets.
  2. The viscosity is killer.
  3. It’s just straight up delicious with lots of citrus and floral notes.

Basically, this is the second coming of Vodka.

So of course I wanted to put it in a spring themed drink with Lavender, Mint, Honey, and Lemon.

And since the mint was so fabulous, I decided to turn this into a smash.

The name of this drink comes from the fact that I honestly never thought I would like a bottle of Vodka enough to buy it.

I Never Thought This Day Would Come

  • 2 oz Orange County Distillery Vodka
  • 3/4 oz Honey Syrup
  • 3/4 oz Lemon Juice
  • 1 dash Barkeep Lavender Bitters
  • 5 big Mint Leaves
  • Garnish: Mint Bouquet

Add mint, Lemon juice, and Honey syrup to Collins glass and muddle. Add Vodka, Lavender Bitters, and ice. Stir for a bit so the ingredients are all swimming together nicely. Top with soda water and garnish with Mint Bouquet.

La Petite Mort with Plantation Barbados Rum

In the not too distant past, my girl Foodie Tails texted me saying, “Just got Plantation Barbados 5 and Angostura 7 Rums.” I replied with, “Oh shit!”

Seeing as I had just run out of Angostura 7, and had been meaning to get the Plantation Barbados 5 since I threw that 4th of July Daiquiri Party, I immediately ran to the liquor store. Luckily they had the very bottle I was looking for, so I bought it, ran back home and made the drink described below.

Now, I LOVE Plantation Rums. They’re aged in used Cognac barrels and meticulously scrutinized for maximum flavour. Well y’all, the flavour is totally there. The Barbados 5 Year Rum has tropical fruits, grasses, a bit of caramel smoothness, leaves a pleasant long finish, and plays well with others.

It REALLY plays well with the above ingredients.

In fact, Plantation Barbados 5 Year Rum plays so well with these ingredients that it’s been my new favourite Rum cocktail for at least two weeks.

La Petite Mort

  • 2 oz Plantation Grande Réserve Barbados 5 Year Rum
  • 1 oz Lime Juice
  • 3/4 oz Honey Syrup*
  • rinse Pernod Pastis
  • Garnish: Pineapple Wedge

Rinse a double Rocks glass with Pernod and chill. Combine remaining ingredients over ice and short shake. Strain into rinsed glass over cracked or crushed ice and garnish.

*This drink is also awesome with Vanilla Bean Syrup subbed for Honey Syrup.

National Hazelnut Month with Frangelico

Did y’all know that September is National Hazelnut month? Neither did I, but I’m so happy I found out about it! What delicious Liqueur is made with Hazelnuts and comes in a bottle shaped like a monk? Frangelico!

Frangelico has been leading the charge to get the mighty hazelnut on our collective consciousness. This liqueur hails from the Piedmont region of Italy, using inspiration from centuries old recipes. It has warm, sweet prominent Hazelnut notes, followed by Vanilla, and Cocoa.

Let’s get to the cocktails!

I decided to start with a Rum sour cause to me, Nuttiness + Rum = hell yes! I didn’t want to go full Tiki, but the Pineapple wedge gives a little island feel to the drink.

  • 2 oz Plantation Barbados 5 Year Rum
  • 3/4 oz Frangelico
  • 1/2 oz Honey Syrup
  • 3/4 oz Lemon Juice
  • 2 dashes Angostura
  • Garnish: Pineapple wedge

Combine ingredients over ice and short shake. Strain into double Rocks glass with ice. Garnish with Pineapple wedge.

Next I decided to get spice-y and desert-y, cause I had a feeling that Frangelico + Jägermeister + Carpano Antica would be a great flavour set. It was. It was such a great flavour set that I keep thinking about it. To dry things out, I added Hine H Cognac as the base and topped it off with a couple dashes of Scrappy’s Chocolate Bitters. DESSERT!

The Road to Turin

  • 1 3/4 oz Hine H Cognac
  • 1/4 oz Frangelico
  • 1/2 oz Jägermeister
  • 1/2 oz Carpano Antica
  • 2 dashes Scrappy’s Chocolate Bitters

Combine ingredients over ice and stirrrrrrr. Strain into chilled coupe and serve.

4th of July Daiquiri Party

Happy 4th of July Weekend to everyone! I’ve been thinking about what I really want to drink/serve at my 4th of July party and honestly, I just want a Daiquiri! Daiquiri Prrrrrrrrrty!

That being said, “I just want a Daiquiri” means so many things to me, and there are many variations one can make by adding one or two ingredients to the Rum + Lime Juice + Sweetness formula. I mean, just by switching out the Rum itself or changing from refined sugar to turbinado sugar can have a profound effect on the flavours of the drink.

First, let’s start with the basics. Flor de Caña 7 Year is my all time fave aged molasses Rum. It is viscous as hell, creamy, with caramel smoothness for DAYYYYYYYS. It will make the best damn Daiquiri you’ve ever had. No lie.

Flor de Caña 7 Year Aged Rum Daiquiri

  • 2 oz Flor de Caña 7 Year Rum
  • 1 oz Lime Juice
  • 3/4 oz Demerara Sugar Simple Syrup (1:1)
  • Garnish: Lime Wheel

Combine ingredients over ice and shake. Strain into coupe and garnish with Lime Wheel.

Now that we’ve got a nice basic Daiquiri down, we can get a little more creative. For this one, we’re going to use a funky Rum from Jamaica that has been aged in the UK: Smith & Cross Navy Strength Rum. Our sweetners are going to get more complex with the addition of Falernum and some of my patented (I wish! Soon!) DD Mix. The spice set will come from the funkiness of the Smith & Cross, DD Mix, and one dropper of Bittermen’s Elemakule Tiki Bitters. Highly recommend these bitter’s y’all!

DP Daiquiri

  • 1 1/2 oz Smith & Cross Jamaican Rum
  • 1/2 oz Velvet Falernum
  • 1/4 oz DD Mix
  • 1 oz Lime Juice
  • 1 dropper Bittermen’s Elemakule Tiki Bitters
  • Garnish: hollowed out Lime half*

In tin combine ingredients over ice and short shake. Pour entire contents of shaker into mason jar. Garnish with one of the Lime halves you used when you juiced the Lime.

For this next one we’re going to go to the books and use a totally fabulous recipe from the 1970’s, Don’s Special Daiquiri. This variation was created to commemorate Don the Beachcomber and use his 1934 Daiquiri recipe while adding a couple of modifiers. I altered the recipe a tad because I felt it needed to be a bit more tart.

Don’s Special Daiquiri

  • 1 oz Jamaican Rum (Smith & Cross)
  • 3/4 oz Aged White Rum (Denizen Aged Rum)
  • 3/4 oz Lime Juice
  • 1/2 oz Passion Fruit Syrup
  • 1/2 oz Honey Syrup
  • Garnish: Maraschino Cherry

Combine ingredients over ice and shake. Strain into a chilled cocktail glass, garnish with Maraschino Cherry.

Lastly, we’re going to use three different Spirits in a Daiquiri that I named after my family. It uses two kinds of Rum and one of my all time favourite infusions, Pineapple Plymouth Gin.

DeLuna Daiquiri

  • 1 1/2 oz Denizen White Rum
  • 1/2 oz Flor de Caña 7 Rum
  • 1/4 oz Pineapple infused Plymouth Gin
  • 1/2 oz Velvet Falernum
  • 1/4 oz Cinnamon Bark Syrup
  • 1 oz Lime Juice
  • Garnish: Pineapple Chunks

Combine ingredients in over ice and shake. Strain into coupe. Garnish with Pineapple.

Fruity Cocktails with Fino Sherry

Y’all, I have been waiting for this post ever since I got that bottle of Inocente Fino Sherry back in January. From the moment I put my lips on this Sherry, I knew, I knew it was going to go with fruit and I knew I was going to use it Long or Tiki style.

I’ve been biding my time.

Today on Instagram, I was challenged to make a Fog Cutter by @el_nova_1 (the person behind last week’s Navy Grog challenge who loves Tiki as much as many of us do) and make the drink immediately! It’s DAMN FABULOUS! LIKE DAAAAAAAYUM FABULOUS. Citrusy, dry, great flavour arc, deep. I’m in luv. With this challenge comes a great opportunity for me to post a couple of other Fruity Sherry drinks I’ve had sitting in my notebook.

First things first about this Fog Cutter: I don’t have any Grape Brandy! I only have Calvados! The recipe also calls for Cream or Amontillado Sherry and I only have Fino Sherry. So, like any good Home Bar Gurrrrrrl, I’ve made some adjustments (ahem, Old Tom Gin) and named the variation “Karl the Fog Cutter” after my beloved San Francisco Bay Area’s archnemesis (or claim to fame), Karl the Fog.

  • 2 oz Denizen Aged White Rum
  • 1 oz Calvados
  • 1/2 oz Hayman’s Old Tom Gin
  • 1/2 oz Inocente Fino Sherry (float)
  • 2 oz Lemon Juice
  • 1 oz Orange Juice
  • 3/4 oz Orgeat
  • Garnish: Sherry float, Orange wedge with Maraschino Cherry spear, Monkey

Combine ingredients over ice and short shake. Strain into Tiki Mug or Collins Glass over Cracked Ice. Float the Sherry, garnish with Orange wedge with Maraschino Cherry and Monkey.

This next one came from a flavour pairing obsession I currently have: Fino Sherry + Apricot Liqueur. It’s to die for. The nuttiness from the Orgeat & Fino go sooooo well with the Apricot. Literally the greatest thing since Smith & Cross Rum + Teeling Irish Whiskey. This one is straight up Tiki, so be sure you have a mint sprig and some Orgeat ready to go!

  • 1 1/2 oz Flor de Caña 7 Rum
  • 1/2 oz Denizen Aged White Rum
  • 1/2 oz Rothman & Winter Apricot Liqueur
  • 1/2 oz Inocente Fino Sherry
  • 1/2 oz Orgeat
  • 1 oz Grapefruit Juice
  • 2 dashes Angostura Bitters
  • Garnish: Mint sprig, two Pineapple chunks and a Maraschino Cherry

Combine ingredients over ice and short shake. Strain into double Rocks glass or short Tiki mug over ice. Garnish with Mint sprig, two Pineapple chunks and a Maraschino Cherry.

Now back to that Cobbler. Goodness, I get such a thrill out of making and/or drinking a Cobbler! This one came to me in the night and I had to write it down before I fell asleep. Again, we’re using the glorious Apricot + FIno Sherry combo along with Carpano Antica Vermouth, Old Tom Gin, and Boker’s Bitters. I wanted this one to taste Old Skool/Pre-Prohibition.

I definitely Flavor Bible’d the Rosemary + Blueberry + Strawberry + Lemon + Orange flavours. If you don’t have the Flavor Bible yet…get to it!

Stafford Cobbler

  • 1 1/2 oz Hayman’s Old Tom Gin
  • 1 1/4 oz Carpano Antica Sweet Vermouth
  • 3/4 oz Inocente Fino Sherry
  • 1/2 oz Rothman & Winter Apricot Liqueur
  • 3/4 oz Lemon juice
  • 1/4 oz Honey Syrup
  • 2 dashes Boker’s Bitters
  • Small handful of Blueberries, muddled
  • Garnish: Strawberry, Blueberry, Orange wheel, Rosemary sprig

In tin, combine Lemon Juice and Blueberries and muddle. Add remaining ingredients, ice and short shake. Strain into Stemmed glass filled with ice and fruit, Orange wedge and Rosemary Sprig on top. Serve with a straw and a spoon so your guests may eat the fruit!

Bring on the Spring cocktails y’all! All of my favouite bars in Brooklyn have switched over to their new programs and I keep eyeing the Lavender bitters up on my fridge. (Keep in mind, most of my bar is up on top of the fridge!) I also keep eyeing the Dolin Blanc ’cause it’s just right for this time of year. (It lives in the fridge. All of the Vermouths and the Sherry live in the fridge.)

  • 1/2 oz Dolin Blanc
  • 1/2 oz Honey Syrup
  • 1/2 oz Lemon Juice
  • 2 dashes BarKeep Lavender Bitters
  • Garnish: Maraschino cherry

Combine ingredients over ice and shake. Double strain into coupe and garnish with Maraschino Cherry.

#RumForTheHills: Don’s Special Daiquiri

A few of us on Instagram have started a #RumForTheHills hashtag and so I thought I’d start with a really fabulous Daiquiri recipe from the 1970s. I got this recipe from the Beachbum Berry Total Tiki app and it’s a knock out! If you don’t have this app (or one of his books) you need to get on it!

This Daiquiri is a version of Don the Beachcomber’s 1934 Mona Daiquiri. Now, of course I made a couple of modifications, namely, 1/4 oz more lime juice and 1/4 oz more Rum cause I like my Daiquiris tart and boozy.

  • 1 oz Jamaican Rum (Smith & Cross)
  • 3/4 oz Aged White Rum (Denizen Aged Rum)

Brunch Bonanza: Teeling & Tea

Welcome to Brunch Bonanza, the segment where we talk about Brunch cocktails!

Well, it’s still snowing in NYC, so I’m still making Hot Toddies. In fact, I took this gorgeous photo two days ago in Prospect Park.

Winter Wonderland y’all

What does one want when one is out in the snow? A Hot toddy with Tea. I am lucky enough to have this terrific bottle of Teeling Small Batch Irish Whiskey and decided to make the toddy with that. Some quick flavour notes about Teeling:

  • Nose: Vanilla, spices, Rum, grains, corn, honey
  • Tongue: Caramel, woody, Rum, apple, a tad peaty or “Moorish”, vanilla
  • Finish: Rich, oily, full bodied, spicy

To these complex flavors I wanted to have a straightforward English Breakfast Tea, Honey, Lemon and complement the Whiskey with Hella Bitter Citrus Bitters. These bitters aren’t just Citrus, they are so much more:

Four kinds of Citrus, Clove, Cinnamon, Allspice, Black Peppercorn, Caraway, Gentian and Wormwood.

Yes please.

Teeling & Tea

  • 2 oz Teeling Small Batch Whiskey
  • 1 oz Honey Syrup
  • 1/2 Lemon Juice
  • 2 dashes Hella Bitter Citrus Bitters
  • 5-6 oz Hot English Breakfast Tea (PG Tips* forever)
  • Garnish: Lemon Wheel & Star Anise

Combine ingredients in mug and stir until everything has combined and is swimming nicely. Garnish with a Lemon wheel and Star Anise on top. Fragrant and delicious.

*Every day of my life I have a cuppa PG Tips. It’s my fave British tea.

Blonde Bertie & Teeling Whiskey

It’s March! We made it! Hopefully this crazy cold weather will begin to let up and we can return to our regularly scheduled programming.

It’s time for Whiskey, ALL the Whiskey. Teeling Small Batch Irish Whiskey is a complex bottle of whiskey aged in Rum casks. Here’s my impression:

Nose: Vanilla, spices, Rum, grains, corn, honey
Tongue: Caramel, woody, Rum, apple, a tad peaty or “Moorish”, vanilla
Finish: Rich, oily, full bodied, spicy

With all those Honey notes, I decided to go in the grown n’ sexy Gold Rush direction. Also, as Teeling Irish Whiskey is a revival Whiskey, along with the notes from Rum casks, I wanted to pair it with Adam Elmegirab’s Boker’s Bitters. I wanted that Old Timey feeling and Blonde Bertie definitely has that. This cocktail is a tad sweet, a tad dry and very very tasty.

Blonde Bertie

  • 2 oz Teeling Small Batch Irish Whiskey
  • 3/4 oz Dolin Dry
  • 1/2 oz Honey Syrup
  • 2 dashes Adam Elmegirab’s Boker’s Bitters
  • Garnish: Lemon Peel

Combine ingredients and stir over ice until proper dilution has been achieved. Strain into coupe, express Lemon peel and garnish.
